Pasta Mia Casa

 


'Mia Casa' is a dish made from the heart, home from home. The saying is derived from the spanish saying 'Mia casa es su casa' which means 'my house is your house'. I always think that cooking is one of the nicest gestures you can do for someone, especially when welcoming people into your home. This dish was first stumbled across in one of my all time favourite restaurants, La Vita. The dish is an old favourite and staple dish for the restaurant, and offers an authentic and warming experience for your tastebuds.  


Ingredients: (4 Servings)

2 tbsp olive oil

1 small onion

3 cloves of garlic 

3 chicken breasts 

Pinch of salt and pepper

Handful of mushrooms

Small head of broccoli 

60ml white wine

600ml chicken stock

105ml whole milk

200g dried pasta (penne or fusilli)

1/2 tsp lemon juice 

50g parmesan grated

Handful of fresh parsley for garinsh

Chilli flakes to take

Splash of double cream


Method:

1. Heat the oil in a large frying pan, on a medium heat. Add the chopped onions and cook until translucent. Then add the finely chopped garlic cloves, and cook for a further 30 seconds.

2. Cut up your chicken into bitesize chunks and add to the pan, season with salt and pepper. Cook for 5 minutes until sealed, moving around the pan. 

3. Add the mushrooms and cook for 2 minutes, before adding the wine. Once the wine is added, bring to the boil and simmer for 2 minutes. Then add both the stock and the milk, and bring to a boil. You then want to add your uncooked pasta. 

4. Once the sauce is brought to a simmer, cook for 10 minutes with lid on. Then you want to  add in the broccoli to the pot, and place the lid back on. Cook for a further 5 minutes. 

5. Remove the lid and add a sprinkling of salt and pepper, and also the grated parmesan/ chilli flakes and cream. Stir through the pot and then add your lemon juice. Sprinkle with fresh parsley. Bon apetit!
